Burritos Colorado

Ingredients

  • 2 pounds beef chuck stew beef
  • 1 small can of enchilada sauce (I use old el paso mild) 10 ounces
  • 2 beef bullion cubes

Instructions

  1. Put beef in the crock pot with can of enchilada sauce and 2 beef bullion cubes (no water)
  2. Cook on low for 8 hours in crock pot

To Assemble

  1. Heat up refried beans (either from a can from the store or make your own)
  2. Take a tortilla and put refried beans on it, flake some of the beef on top and fold into a burrito
  3. Put burritos in a glass baking dish, cover with shredded cheese, and pour some of the sauce on top 
  4. Either bake at 350 degrees in the oven for 5-10 minutes until cheese is melted, or broil on high for 6 minutes in the oven
