Instant Pot Sausage Kale Soup
Ingredients
- 1 cup diced onion
- 6 cloves minced garlic
- 1 pound mild or spicy Italian sausage
- 12 ounces frozen riced cauliflower
- Kale – chopped into bite sized pieces
- 3 cups chicken stock or water
- ½ cup heavy cream
- ½ cup shredded parmesan
Instructions
- Turn Instant pot to saute
- Add the sausage and onion and break up to brown
- Add the garlic and saute
- Add the frozen cauliflower, water or chicken stock, and kale
- Cook on high pressure for 3 minutes
- Let pressure release naturally
- Open the pot and slowing stir in the heavy cream and parmesan
