Instant Pot Sausage Kale Soup


Ingredients

  • 1 cup diced onion
  • 6 cloves minced garlic
  • 1 pound mild or spicy Italian sausage
  • 12 ounces frozen riced cauliflower
  • Kale – chopped into bite sized pieces
  • 3 cups chicken stock or water
  • ½ cup heavy cream
  • ½ cup shredded parmesan

Instructions

  1. Turn Instant pot to saute
  2. Add the sausage and onion and break up to brown
  3. Add the garlic and saute
  4. Add the frozen cauliflower, water or chicken stock, and kale
  5. Cook on high pressure for 3 minutes
  6. Let pressure release naturally
  7. Open the pot and slowing stir in the heavy cream and parmesan
