Ingredients
- 3 1/2 pounds of Russet Potatoes
- 2 cups heavy cream
- 6 Tablespoons Butter
- Salt
Instructions
- Preheat oven to 450 degrees, poke holes in potatoes place on the middle rack bake 60 minutes
- Remove from oven and while still hot cut in half and scoop out the potatoes into the bowl of a stand mixer
- Beat on low speed until smooth
- In saucepan over medium heat bring cream and 6 tablespoons of butter to a simmer
- Gradually fold in the cream to the potatoes
Potato Skins
You can use the skins from the potatoes to make potato skins
Salt them, add cheddar cheese, bacon and chives
Bake until everything melts 5-10 minutes, Add sour cream and chives and serve
