Shrimp Penne Pasta


Ingredients

  • 1.5 pounds peeled and deveined shrimp
  • 1 pound penne
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 diced onion
  • 2 cloves minced garlic
  • ¾ cup white wine
  • 8 ounces tomato sauce
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  • Heat butter and oil in a large skillet over medium high heat
  • Add shrimp and cook a few minutes until pink
  • Remove shrimp to a plate let them cool and cut into smaller pieces
  • In the same skillet add the onion and garlic and sautee for about 3 minutes until opaque
  • Pour in the wine and let it reduce for a few minutes, stirring occasionally (you can use chicken stock instead if you want)
  • Add tomato sauce and stir well until combined, cook for 3 minutes
  • Stir in the heavy cream
  • Add salt and pepper to taste
  • Add shrimp and turn the heat down to low and simmer for a couple of minutes
  • Make the pasta as directed on the box, drain and add to the sauce mixture
