Chop off the stems of swiss chard and cut into small pieces
Coat pan with olive oil sautee diced onion and swiss chard stems
Cut the chard leaves into pieces
When stems and onion are soft about 8 minutes add leaves
Stir and then add 2 tablespoons of water and cover pan to steam
After a few minutes take lid off and stir. When mixture is wilted then turn off the stove and place mixture in the bottom of a pyrex dish which you have sprayed cooking spray into.
Preheat oven to 425 degrees
In a medium bowl crack 5 eggs and mix
Add milk and mix
Add salt, and 1 tsp mustard powder and mix
Add shredded cheeses of your choice (we usually do cheddar, havarti and mozzarella.
Add the egg mixture to the pyrex dish with the chard and mix together
Dollop goat cheese on the top
Put into oven at 425 for 40-45 minutes until baked through
