Soft Pretzel Bites with Cheese Sauce


Ingredients:
1 1/2 cup warm water (110-115 degrees)
1 tbsp sugar
2 tsp kosher salt
2 1/4 tsp instant yeast
4 1/2 cups all purpose flour
2 ounces melted butter
vegetable oil
10 cups water
2/3 cup baking soda
2 tbsp butter melted

1. In bowl of stand mixer, mix together water, sugar, yeast, let sit for ten minutes.
2. Switch to dough hook and add flour and butter and mix on low speed until combined, then medium speed for 4-5 minutes
3. Transfer to well oiled bowl, cover with plastic wrap and put in warm place for 1 hour
4. Preheat oven to 425 degrees, line 2 large baking trays with parchment paper
5. bring 10 cups of water and baking soda to a boil
6. divide dough into 8 pieces and roll into rope, cut into 1 inch segments
7. boil for 30 seconds place on baking sheet brush with either melted butter or egg yolk and bake until golden brown 10-12 minutes

Cheese sauce:
Ingredients:
2 tbsp butter
2 tbsp flour
1 cup milk
8 ounces extra sharp cheddar

In small saucepan melt butter over medium heat, whisk in flour cook for 30 seconds
Slow whisk in the milk until no lumps of flour remain, bring to medium low and heat until thickens.  Remove from heat and add cheese.
