Creamy Chicken Spinach Casserole

Creamy Spinach Chicken Casserole is one of the most popular creamy chicken recipes from our blog! This chicken and spinach casserole is layered into a baking dish using fresh spinach, raw chicken breasts, and a parmesan cream sauce that will melt under the cheese crust! Serve it as an easy weeknight dinner over rice or pasta! 

Ingredients

Ingredients:

  • 1 lb chicken breasts (2 chicken breasts, cut in half crosswise)
  • 8 oz fresh spinach
  • 2 cups broccoli florets (optional)
  • 8 oz Monterey Jack cheese (shredded)

Creamy Sauce:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup parmesan cheese (grated)
  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

Instructions

Instructions:

  • Preheat the oven to 500°F. Lightly spray a 13 x 9-inch baking dish with cooking spray and set aside. Meanwhile, combine the creamy sauce ingredients.
  • Next, pack the casserole dish with the spinach. If you choose to can add 2 cups of broccoli florets on top of the spinach.
  • Top with uncooked chicken breasts.
  • Spread evenly with the creamy sauce mixture.
  • Sprinkle with shredded Monterey Jack cheese and bake on the bottom rack of the preheated oven for 20-25 minutes or until spinach shrinks and chicken breasts cook thoroughly.

Notes

  • Note: use a baking dish safe for an oven temperature of 500°F like a heavy dutch oven baking dish.
