Fried Chicken


Ingredients

  • 1 ¼ cup buttermilk
  • 3 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 3 ½ pounds bone in skin on chicken cut into pieces
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 ¾ cups vegetable oil
  • Salt
  • Hot sauce (optional)

Instructions

  1. Whisk 1 cup buttermilk with 1 tablespoon salt, dash of hot sauce, 1 tsp black pepper, ¼ tsp garlic powder, ¼ tsp paprika in a large bowl. Marinade chicken in this mixture overnight in the refrigerator.
  2. Adjust oven rack to middle position and preheat to 400 degrees
  3. Whisk flour, baking powder, 1 tsp salt, 2 tsp black pepper, ¾ tsp garlic powder, ¾ tsp paprika, in a large bowl
  4. Add ¼ cup buttermilk to the mixture and mix with hands to form small clumps
  5. Working one piece at a time dredge the chicken into the flour mixture, place chicken on a plate skin side up
  6. Heat oil in a straight sided sautee pan over medium high heat until it is 375 degrees
  7. Carefully place chicken pieces in pan skin side down, cook until golden brown 3-5 minutes and then turn over cook another 2-4 minutes. Then transfer to wire set in rimmed baking dish.
  8. Bake the chicken in the oven until thermometer reads 160 degrees for breasts and 175 degrees for thighs and legs approximately 15-20 minutes
  9. Let it rest 5 minutes before serving
