Swiss Chard Eggs


Ingredients

  • Bunch swiss chard
  • Onion- diced
  • 5 eggs
  • ½ cup milk
  • Shredded cheeses
  • Goat cheese
  • Olive oil

Instructions

  1. Chop off the stems of swiss chard and cut into small pieces
  2. Coat pan with olive oil sautee diced onion and swiss chard stems
  3. Cut the chard leaves into pieces
  4. When stems and onion are soft about 8 minutes add leaves
  5. Stir and then add 2 tablespoons of water and cover pan to steam
  6. After a few minutes take lid off and stir. When mixture is wilted then turn off the stove and place mixture in the bottom of a pyrex dish which you have sprayed cooking spray into.
  7. Preheat oven to 425 degrees
  8. In a medium bowl crack 5 eggs and mix
  9. Add milk and mix
  10. Add salt, and 1 tsp mustard powder and mix
  11. Add shredded cheeses of your choice (we usually do cheddar, havarti and mozzarella.
  12. Add the egg mixture to the pyrex dish with the chard and mix together
  13. Dollop goat cheese on the top
  14. Put into oven at 425 for 40-45 minutes until baked through
