Shrimp Penne Pasta
Ingredients
- 1.5 pounds peeled and deveined shrimp
- 1 pound penne
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 diced onion
- 2 cloves minced garlic
- ¾ cup white wine
- 8 ounces tomato sauce
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat butter and oil in a large skillet over medium high heat
- Add shrimp and cook a few minutes until pink
- Remove shrimp to a plate let them cool and cut into smaller pieces
- In the same skillet add the onion and garlic and sautee for about 3 minutes until opaque
- Pour in the wine and let it reduce for a few minutes, stirring occasionally (you can use chicken stock instead if you want)
- Add tomato sauce and stir well until combined, cook for 3 minutes
- Stir in the heavy cream
- Add salt and pepper to taste
- Add shrimp and turn the heat down to low and simmer for a couple of minutes
- Make the pasta as directed on the box, drain and add to the sauce mixture
